250g dry chickpeas
15 tbsp extra virgin olive oil
juice of 2 lemons
1 lemon zest
3 tbsp tahini
salt and pepper
Place the chickpeas in a large bowl of water and soak for at least 6 hours.
Drain the water and rinse the chickpeas before cooking. Place them in a large pot and cover them with 1 ½ litres of water.
Cook the chickpeas over a medium to high heat, for 45 minutes to 1 hour. Drain the chickpeas (reserve 5 tablespoons of the water they were boiled in) and allow them to cool for 5 minutes.
Blend the chickpeas with the remaining ingredients in a blender, adding 5 tablespoons of the drained water, until the hummus becomes creamy.
