Ideal as a snack or dip, hummus adds a great nutrient and protein boost to your daily needs.

Ingredients

  • 250g dry chickpeas

  • 15 tbsp extra virgin olive oil

  • juice of 2 lemons

  • 1 lemon zest

  • 3 tbsp tahini

  • salt and pepper

Method

  • Place the chickpeas in a large bowl of water and soak for at least 6 hours.

  • Drain the water and rinse the chickpeas before cooking. Place them in a large pot and cover them with 1 ½ litres of water.

  • Cook the chickpeas over a medium to high heat, for 45 minutes to 1 hour. Drain the chickpeas (reserve 5 tablespoons of the water they were boiled in) and allow them to cool for 5 minutes.

  • Blend the chickpeas with the remaining ingredients in a blender, adding 5 tablespoons of the drained water, until the hummus becomes creamy.
