A super healthy snack and a great alternative to nuts or fried crisps!

Ingredients

  • 2 large sweet potatoes

  • 4 tbsp extra virgin olive oil

  • salt

Method

  • Peel the sweet potatoes.

  • Using a handheld slicer or a peeler, slice the sweet potatoes into very thin slices.

  • Preheat the οven to 200˚ C fan.

  • Line baking sheet on 2 oven trays.

  • In a small bowl, combine the olive oil and the salt.

  • Spread the sweet potato slices out in a single layer on the baking sheets.

  • Brush the sweet potatoes with the oil mixture.

  • Position the oven trays in the upper and lower thirds of the oven and bake until crispy (around 15 minutes, depending on the oven).

  • Allow them to cool completely before transferring to an air tight container.
