A super healthy snack and a great alternative to nuts or fried crisps!

2 large sweet potatoes
4 tbsp extra virgin olive oil
salt
Peel the sweet potatoes.
Using a handheld slicer or a peeler, slice the sweet potatoes into very thin slices.
Preheat the οven to 200˚ C fan.
Line baking sheet on 2 oven trays.
In a small bowl, combine the olive oil and the salt.
Spread the sweet potato slices out in a single layer on the baking sheets.
Brush the sweet potatoes with the oil mixture.
Position the oven trays in the upper and lower thirds of the oven and bake until crispy (around 15 minutes, depending on the oven).
Allow them to cool completely before transferring to an air tight container.
